I have extracted part one, do I need to mount the ISO before downloading part 2 or try and download one at a time?
I tried using 7ZIP to download all parts together but only did the first part and not the others.

all the parts contain the same thing the ISO file, is this correct?

Uhm… I don’t think you can say it like that, for this specific situation, the whole game file will be around 28GB, and to be easier to share on the internet, it was divided into 6 parts, so you have to combine them all when extracting like the video I sent you to have the whole game file again. Each part contains just its part of the file, not the same thing.
